Idli And Dosa Batter Recipe

INGREDIENTS

  • 1 cup of regular rice

  • 1/4 cup of urad dal (skinned black lentils)

  • 1/4 cup of flattened rice (poha)

  • 1/2 teaspoon of fenugreek seeds

  • Salt (to taste)

  • Oil (for greasing)

For Soaking

  1. Begin the night before by rinsing the rice, urad dal, flattened rice, and fenugreek seeds separately under running water.

  2. In a large bowl, combine the rice, urad dal, and fenugreek seeds. Add enough water to cover them completely and let them soak overnight.

  3. Place the flattened rice in a separate bowl, rinse it once, and add enough water to cover it. Allow it to soak overnight as well.

For Grinding

  1. The next day, drain the excess water from the soaked rice, urad dal, and fenugreek seeds. Keep the drained water aside.

  2. Blend the soaked rice, urad dal, fenugreek seeds, and flattened rice together in a grinder or a food processor until you obtain a smooth and flowing batter. Add some of the drained water from earlier if needed to achieve the desired consistency.

  3. Transfer the batter to a large bowl and add salt. Mix well, cover the bowl, and let it ferment for at least 8 hours or overnight. Fermentation helps to bring out the tangy flavor and make the dosas light and fluffy.
